Côte d’Azur

From Menton to Mandelieu-La-Napoule, the Côte d’Azur is a great invitation to a route full of Mediterranean flavours with many of the restaurants are set in stunning backdrops, more often than not endowed with panoramic views which will take your breath away.

Just as the Côte d’Azur has been a source of inspiration for the greatest painters it is and always has been for chefs. From the local chefs to the chefs from the four corners of the planet, they have come to the region and re-invented traditional recipes and showcased local produce by adding their twists and creativity.

The cuisine of the region was personified by one of the leading figures of French gastronomy, Roger Vergé who brought provençal cuisine to a new level of sophistication. Since then, great chefs have come to live in the region, such as Alain Ducasse in Monaco, at the Louise XV and Alain Ducasse at the Hotel de Paris, the Côte d’Azur's 3 Michelin-star flagships.

The succession has ensured particularly by Arnauld Donckele, 3 Michelin-star Chef of La Vague d'Or in Saint Tropez. The inexhaustible palette of herbs of the region is the starting point for his many creations. Like an alchemist of colours and flavours, he composes plates conceived as naturalist canvases inspired by the Mediterranean and Provence.

In 2017, no fewer than seven restaurants on the Côte d’Azur earned 2 Michelin-stars.

It is impossible to resist the charm of the 2 Michelin-star Mirazur in Menton and its Argentine chef Mauro Colagreco who creates a hymn to the aromatic plants, flowers and vegetables and the citrus fruits of the Côte d’Azur. What can you say about the 2 Michelin star Chantecler at Hotel Negresso in Nice and Jean-Michel Rieubland and his sophisticated graphic dishes? Nothing more can be written about the 2 Michelin-star Villa Archange and its chef Bruno Oger, already laden with stars, "the Maestro of Le Cannet" never stops surprising with his talents. Only 10 months after opening earning 2 Michelin-stars an exploit that only Jean-Francois Piège and Joël Robuchon have pulled off.

And we can never forget another great figure of fine dining on the Côte d’Azur, Christian Sinicropi from Cannes, at the helm of the 2 Michelin-star Palme d'Or, located on the Croisette in Cannes! A great local chef who promotes his terroir meticulously.

All the chefs of the Côte d’Azur and the Var, with or without stars want to continue this gastronomic tradition while bringing it up-to-date. The future of conserving this world-renowned culinary heritage that the labels "Cuisine Nissarde" and the "Maitres-Restauranteurs Côte d’Azur France" brand have adopted look very safe in their hands.

L'Oasis - Mandelieu La Napoule

One of our personal favourites is the 2 Michelin-star Restaurant L'Oasis in Mandelieu La Napoule. In the shade of the patio, surrounded by palm trees and exotic flowers or on the verandas of the conservatory, this lush green oasis is the setting for the renowned fusion cuisine of the Raimbault brothers.

Depending on what catches their eye at the Forville Market in Cannes, Chefs Stéphane and Antoine put together a menu that combines contemporary and Provencal flavours with infinite Asian flourishes, featuring “Lime-Infused Soufflé of Locally Caught Sea Urchins” and “Soleil Levant of Raw Fish”. But it is their brother François, the patissier, who adds the finishing touches to this magical and exotic symphony with his renowned “Caravan of Desserts”.
